HEY ALL!! Here is the long over due recipe for my baked cauliflower buffalo bites.
1 head of cauliflower
1 cup Milk ( any milk is fine I use soy)
1 cup flour ( I use coconut but this is such a small amount for a whole head that it would be fine to use regular IF you are not gluten free)
1 Tsp Garlic Powder
1 cup Panko bread crumbs
1 tbsp olive oil ( I do not use this but some pans like to stick)
2/3 cup buffalo sauce ( I make my own recipe below)
Preheat oven 450 degrees F
Cut cauliflower into bite size pieces like in the picture too big they will not cook all the way In a large ziploc bag ( or big bowl) mix milk, flour, garlic powder and salt and pepper to taste.close bag and squish around until mixed (or stir if in a bowl) Add all cauliflower to bag and squish around until fully coated set aside in another bag add the panko prepare pans wipe with oil or leave as is. I leave mine it browns them better make sure you have enough space for all the cauliflower. Even if you don’t eat it this time you still need to bake. squish the batter and cauliflower around again In a strainer pour the cauliflower and batter into it. let drain a bit do not shake to remove pour into the panko bag and roll around separate on pans. try to keep from touching or staking bake 15 min then flip them the best you can. bake another 5 to 10 min. until a fork goes in easy and they feel soft when they are done option to toss all in buffalo sauce or toss some in a bit of sauce or serve with sauce on the side. A little goes a long ways with this sauce.
Buffalo Sauce Recipe
2/3 cup franks red hot sauce
1/2 cup butter or ghee or coconut oil
1 1/2 tbs vinegar (optional)
1/4 tsp Worcestershire sauce (optional)
melt butter ghee or coconut oil add other ingredients mix. It may need to be reheated to keep separated You can Freeze any uneaten cauliflower bites shake them in the sauce or just the way they are. use within 1 month. bake at 450 for 15 min. flipping halfway through
I want to share a bit of my story. 16 years ago I was having so many health problems. I was unable to even put shoes on. I was barely able to walk and to sit down was so hard, getting up was almost impossible. After being told by one Dr. that it was because it was humid out, one telling me I had the flu, and one saying they were just not sure but something must be wrong. They finally started testing me. I had Lyme's disease it took 16 weeks for them to diagnose it and now not only do I fight the side effects that never go away from Lyme's but, I developed Rheumatoid Arthritis. As it has progressed over the last 16 years I have started developing Fibromyalgia. After a crazy amount of med changes, going on prednisone that made me gain 75 lbs in 3 months. I had been put on methotrexate. I loved this one! FINALLY no pain or at least in was manageable. Months of this relief I finally thought I might get back my normal life. Then I go for my 3 week blood draw. I get a call 2 hours later saying I need to immediately stop taking them and go see my Rheumatologist. My wonder drug/ life saver had done so much damage to my liver he compared it to that of someone drinking hard liquor all day for 20 years. I was devastated. I started to feel defeated and wanted to give up. For the next year it was a constant medication change. Then when I finally realized my RA Doctor was not even paying attention to me I switched. This one gave me a stern talking to about the meds and talking care of myself. I had been put on Humaria shots along with my other meds by the initial RA doctor. After 3 months I finally had enough my leg would swell up every time and everything that swelled up then turn into a bruise. I took my shot the day before going to my next RA appointment. She took me off those shots right away and had me start Enbrel I really like the help it gives me but I had finally had enough. I feel horrible I am too heavy and I wanted to give up.
Then one day I just realized that I am letting this thing beat me!!!
I started working out eating healthier and cleaner. I opt to try more natural products and foods. This is what made me start wanting to create a blog. There are so many people out there that don't know where to start or how. My intention with this blog is to help those hoping to go the healthier route.
